In a bowl, season the ground beef with cumin powder, onion powder, garlic powder, black pepper, and salt. Mix until the seasonings are evenly distributed, then place the beef into a small loaf pan or a 4-inch pan.
Bake in a preheated oven at 350°F for 20 minutes, covered with aluminum foil.
While the beef is baking, prepare the vegetables. Slice the tomatoes and cucumber into rounds, thinly slice the red onion, and cut the romaine into small strips. Season the vegetables lightly with salt and vinegar.
In a small bowl, mix the plain yogurt with the chopped mint leaves, minced garlic, lime juice, and a little salt. Stir until smooth and set aside.
Once the beef is cooked, place it in the freezer for 5 to 10 minutes so it firms up. Slice it into thin strips, then sear the slices in a skillet until the edges develop a caramelized crust.
To assemble the gyros, fill each pita with romaine, tomato, onion, cucumber, sliced beef, mint yogurt sauce, feta cheese, and Alexandra’s Pikliz® Hot Sauce. Wrap with parchment paper or aluminum foil if desired, then serve warm.

For the best texture, do not skip the quick chill after baking the beef. That short rest helps it slice more cleanly before searing. The skillet step is also worth it because it gives the meat better texture, deeper flavor, and those slightly caramelized edges that make homemade gyros even more satisfying.
These gyros pair well with crispy fries, roasted potatoes, or a simple cucumber salad if you want to turn them into a fuller dinner. If you enjoy bold, layered meals like this, be sure to explore the Learning Hub for more recipe inspiration and flavor ideas.
