Chinese Steamed Dumplings with Alexandra's Pikliz

Yields: 24 dumplings Prep time: 1 hour Cook time: 15-20 minutes

Ingredients:

For the dough:

• 2 cups all-purpose flour
• 1 teaspoon salt
• 1 cup hot water

For the filling:

• 1 pound ground pork or chicken
• 1 cup shredded cabbage
• 1/4 cup chopped scallions
• 1 tablespoon soy sauce
• 1 teaspoon sesame oil
• 1/2 teaspoon ginger, grated
• 1/4 teaspoon garlic powder
• Salt and pepper to taste

For serving:

• Alexandra's Pikliz Spicy Pepper Relish
• Steamed rice

Instructions:

1. Make the dough:

   • In a large bowl, combine the flour and salt.
   • Gradually add the hot water, stirring until a dough forms.
   • Knead the dough for 5-7 minutes until smooth and elastic.
   • Wrap the dough in plastic wrap and let it rest for 30 minutes.

2. Make the filling:

   • In a large bowl, combine the ground meat, cabbage, scallions, soy sauce, sesame oil, ginger, garlic powder, salt, and pepper. Mix well.

3. Assemble the dumplings:

   • Roll out the dough on a floured surface to about 1/8 inch thickness.
   • Cut the dough into circles using a 3-inch cookie cutter or a glass.
   • Place a spoonful of filling in the center of each circle.
   • Fold the dough over the filling and pinch the edges together to seal.

4. Cook the dumplings:

   • Bring a large pot of salted water to a boil.
   • Gently place the dumplings in the boiling water, making sure they don't stick together.
   • Cook for 3-5 minutes, or until the dumplings float to the surface.

5. Serve:

   • Serve the steamed dumplings with Alexandra's Pikliz Spicy Pepper Relish and steamed rice.
