Cornmeal Muffin with Alexandra’s Pikliz


  • 1 cup all purpose flour
  • 1 cup corn meal
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 cup milk
  • 4 tbsp Alexandra’s Pikliz


  1. Preheat the oven to 375F
  2. Line baking tray with muffin liners or lightly grease all sides
  3. In a large bowl, mix together all the dry ingredients: all purpose flour, corn meal, granulated sugar, baking powder, and salt
  4. In another bowl, whisk together all the wet ingredients: egg, vegetable oil, milk, and Alexandra’s Pikliz
  5. Pour the wet ingredients into the dry ingredients, little at a time and combine into a homogenous batter
  6. Spoon batter into prepared muffin cups
  7. Bake in oven for 18 - 20 min or until it pass the toothpick test. (toothpick comes out clean when inserted)
  8. Enjoy with an extra spread of Alexandra’s Pikliz on top when serving!
